Recipes: Snacks – Apple, carrot and walnut cookies

A wholesome snack packed with fruit, vegetables and healthy fats

These cookies are a firm favourite in our house and perfect for batch baking. They’re naturally sweetened with apple, packed with goodness and make a great afternoon snack alongside a cup of tea. They feel like a treat while still providing plenty of fibre, healthy fats and slow-release energy.

Ingredients

  • 1 cup oats (or rolled oats blended into a flour)
  • 1 cup wholemeal flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 large carrot, grated
  • 1 medium apple, grated
  • ½ cup walnuts, roughly chopped
  • ½ cup coconut oil, melted and cooled slightly
  • ⅓ cup honey or maple syrup
  • Optional: 1 scoop protein powder
  • Optional: 1 tablespoon chia seeds

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. In a large bowl, combine the oats, flour, baking powder and cinnamon.
  3. Stir through the grated carrot, apple and walnuts.
  4. Add the coconut oil and honey or maple syrup and mix until a soft dough forms.
  5. If using, stir through the protein powder and chia seeds.
  6. Roll into small balls and gently flatten onto the baking tray.
  7. Bake for around 18-20 minutes or until lightly golden.
  8. Allow to cool before storing in an airtight container.
